Courgette Flowers: In Season Now for New Zealand Chefs

Courgette flowers are the edible blossoms of the courgette (zucchini) plant. These delicate flowers—typically bright yellow with soft, velvety petals—are prized for their subtle courgette flavour and tender texture. 

In New Zealand, courgette flowers are typically in season from September through early January, aligning with the warmer months when courgette plants are in full bloom. Due to the great weather we have been experiencing these are available to order now.

Courgette flowers are a staple in Mediterranean and Mexican cuisines, and their popularity is growing rapidly in New Zealand’s fine dining scene. Here are a few ways chefs are using them:

  • Stuffed with ricotta, goat cheese, or herbs, then lightly battered and fried
  • Served raw in salads, adding a floral note and vibrant colour
  • Garnished on pasta, risotto, or pizza for a seasonal flourish
  • Tempura-style, paired with citrus or aioli for a light entrée

Their mild flavour pairs beautifully with fresh herbs, soft cheeses, lemon zest, and olive oil.

Due to their fragility and short shelf life, they are best used fresh.

Due to their delicate nature, courgette flowers should be:

  • Used within 24 hours of delivery for peak freshness
  • Stored in the fridge in a breathable produce bag
  • Handled gently—rinse under cold water and pat dry before use
